Easy Shrimp And Veggie Stir-fry Dinner Idea

I‘m currently in a season of mom life where I’m willing to save any time I can.

Making meals with shortcut ingredients, which is basically pre-packaged food, is such a huge convenience!

It’s literally the difference between spending hours and minutes in the kitchen. The minutes I save, I can use on something else that matters more to me.

So if you’re a passionate home chef, shortcut dinner ideas may not be for you, and that’s okay! 

Today’s dinner idea is for all the busy moms who, like me, need to get dinner done fast. 

This shrimp stir-fry meal comes together in 15 minutes and it’s healthy too! #momwin

Just Two Ingredients 

You’ll need a frozen bag of small, peeled, tail-off shrimp, and a large family-size bag of frozen Asian stir-fry. 

At the time of writing this, the shrimp was $6.22, and the stir-fry was only $5.98 at Walmart!!! 

With the rising cost of groceries since the pandemic, I’m not mad about this cheap dinner idea at all. 

How to Make Shrimp Stir-Fry

I first thawed the shrimp in a large mixing bowl full of cold water per instructions on the back of the bag. 

While that was thawing, I started working on the stir-fry and followed those instructions to the tee. 

You simply heat a few tablespoons of oil in a large skillet and add half the bag of frozen vegetables to the pan. Cover with lid and let it simmer for about 12 minutes on medium heat, stirring occasionally. 

While the vegetables simmer, begin cooking the shrimp. 

I melted about three tablespoons of butter in a small skillet before adding the shrimp. 

Season with salt, pepper, and Old Bay to taste and allow to cook for about five minutes. 

By now, it’s time to add your sauce packet that came inside the bag of vegetables to your stir-fry, then follow the remaining instructions located on the back of the bag. 

Once your veggies and shrimp are done, it’s time to mix the two together. The buttery shrimp flavor compliments the stir-fry sauce so well and tastes as if you slaved over the stove for hours!!!

I always serve this with Minute White Rice. It’s my go-to when I need to whip up a simple side dish quickly.
