Here’s an easy slow cooker recipe to add to your menu this week.
I love pulling out my slow cooker on Sundays, especially because I am super busy.
I usually have church to attend, groceries to restock, laundry to fold, things to do with my family, and still get prepared for the week ahead, so I don’t have much time to spend cooking.
These Pineapple Honey Barbecue Meatballs are the perfect dump and go slow cooker recipe for busy days when you don’t have time to cook.
And it’s made with four main ingredients, including frozen meatballs which is a huge time saver since I’m currently in a season of mom life where I’m willing to save any time I can.
That includes making meals with shortcut ingredients or premade food to get dinner done faster!
Here is everything you need:
- 1 family size bag of meatballs, frozen
- 1 cup barbecue sauce
- 15 oz can of pineapple chunks
- ½ cup honey
- salt and pepper, to taste
- fresh parsley for garnish, optional
Barbecue Sauce: I used the original Sweet Baby Ray’s barbecue sauce because it is my absolute favorite and makes a perfect base for the meatball sauce.
Pineapple Juice: When you buy the canned pineapple chunks, you will only use the juice to make the meatball sauce.
How to Make Pineapple Honey Barbecue Meatballs
Dump the frozen meatballs into the slow cooker.
In a separate bowl, whisk together barbecue sauce, 1 cup of pineapple juice drained from the can, honey, salt and pepper.
Pour sauce over meatballs. Cover with lid and set slow cooker to LOW for 4-5 hours.
Garnish with fresh parsley and serve.
We enjoyed these Pineapple Honey Barbecue Meatballs over rice and my kids devoured them because the meatball sauce is so delicious.
If you have leftovers, you can put them in an airtight container for up to 4 days in the fridge.
